- 1 ( 13.5oz) can full-fat coconut milk
- 3 tablespoons soy sauce
- ¾ cup Trader Joe's Red Curry Sauce
- 3 large garlic cloves, minced
- 2 cups spinach leaves, roughly chopped
- 1 (16oz) bag of Trader Joe's vegetable gyoza
- ¼ cup minced chives
Preheat the oven to 400 degrees Fahrenheit.
Add all of the wet ingredients to an 8x11 casserole dish. This includes: coconut milk, red curry sauce, soy sauce, and garlic. Use a whisk to mix it until everything is incorporated and creamy.
Mix in the chopped spinach and minced chives.
Lay the frozen dumplings into the sauce, into rows open side up.
Cover the dish with tin foil and bake for 35 minutes.
Carefully remove the tin foil and allow the dumplings to sit for 5 minutes. Optionally sprinkle with leftover minced chives and carefully spoon dumplings and sauce into separate serving bowls, and enjoy!
Storage:
Store leftovers in an airtight container in the fridge for up to 4 days. Reheat in the oven or microwave until warmed through.
Tips + Modifications:
Use full-fat coconut milk. This gives the sauce its creamy, dreamy texture. Light coconut milk can make it too watery.
Keep in mind that the red Thai curry sauce is on the spicy side. It may not be suitable for children due to the mild spice.
Spread the dumplings in a single layer so they cook evenly in the sauce.
Stir in sriracha or chili flakes for more heat.
