Can I freeze the dates? No. I do not recommend freezing the dates. Keep them in the fridge and you will be all set.
Can I use any type of protein powder? Sure! I can imagine that chocolate flavor would be great as well.
Do I have to use soft dates for this recipe? Yes. You need them to be soft enough to be able to cut and pull them open in order to stuff them with the cashew mixture.
Can I dip the dates into chocolate? Yes! Feel free to melt some vegan chocolate chips with a little bit of coconut oil and dip your finished dates into the melted chocolate. Allow them to harden in the fridge.
Can I use a different type of nut butter? To be honest, you can use peanut butter or almond butter but keep in mind that the “cake batter” flavor will be missing.
The Ingredients
Medjool dates: I recommend using fresh Medjool dates and not another variety. They taste best for this recipe. Make sure you have allowed your dates to come to room temperature before starting this recipe.
Cashew butter: You will need creamy cashew butter to make the mixture. If the cashew butter is too hard, soften it in the microwave just a bit using 5-second intervals.
Plant-based protein powder: Grab two tablespoons of your favorite, clean vanilla plant protein powder. It will mix nicely with the creamy cashew butter and turn into a delicious and healthy stuffing for the dates.
Chocolate candies: I like to use brands that do not use fake food dyes such as Trader Joe’s brand. You could also use dark chocolate chips instead.
The Instructions
Step one: Cut 1/2 way through each date, length-wise, remove the pit, and open them wide enough to allow for a teaspoon of wet mixture. Set them on a large plate.
Step two: Add creamy cashew butter and vanilla plant protein powder to a small bowl. Mix it up well until the mixture is creamy and well blended.
Step three: Use a small spoon and spread about 1 teaspoon of the cashew butter mixture into the date. Repeat with all of the dates.
Step four: Press 3 chocolate candies or chocolate chips into the tops of each date.
Enjoy immediately if you would like.
To store, add the dates to an airtight container and place them in the fridge for up to two weeks. Keep in mind that they will harden a bit in the fridge. I recommend allowing them to thaw for 10 minutes before enjoying.
Tips + Modifications
Make sure your dates are at room temperature and soft before starting this recipe. I like to take my dates out of the fridge in the morning before making them at night.
Optionally you can mix in 1-2 tablespoons of rainbow sprinkles into the batter for an even more fun vibe that your kids will love.
