- 10 soft Medjool dates
- ⅓ cup creamy cashew butter
- 2 tablespoons vanilla plant-based protein powder
- ¼ cup chocolate-coated candies or chocolate chips
Cut 1/2 way through each date, length-wise, remove the pit, and open them wide enough to allow for a teaspoon of the wet mixture. Set them on a large plate.
Add creamy cashew butter and vanilla plant protein powder to a small bowl. Mix it up well until the mixture is creamy and well blended.
Use a small spoon and spread about 1 teaspoon of the cashew butter mixture into the date. Repeat with all of the dates.
Press 3 chocolate candies or chocolate chips into the tops of each date.
Enjoy immediately if you would like. To store, add the dates to an airtight container and place them in the fridge for up to two weeks. Keep in mind that they will harden a bit in the fridge. I recommend allowing them to thaw for 10 minutes before enjoying.
Make sure your dates are soft before starting this recipe. I like to leave them out on the counter in the morning and make them at night.
Make sure your cashew butter is creamy. If it is on the harder side, microwave it in 5-second increments until creamy (not melted).
Optionally, add 1-2 tablespoons of rainbow sprinkles to the cashew batter for a more fun vibe.
