1 large plate lined with parchment paper
1 medium bowl *for the peanut butter dough
1 small glass bowl *to melt the chocolate in
- 12 soft Medjool dates, pitted, and sliced in half but only on top
- ½ cup almond flour
- 2 tablespoons creamy, runny, all-natural peanut butter
- 1 tablespoon pure maple syrup
- 1 teaspoon coconut oil
- ¼ cup trail mix, chopped
For the melted chocolate drizzle:
- ¾ cup vegan chocolate chips
- 1 teaspoon creamy, all natural peanut butter
- 1 teaspoon coconut oil
- Optional: finely chopped trail mix to sprinkle over tops
Open all of the dates and place them on a large plate, lined with parchment paper.
In a medium bowl, combine the peanut butter cookie dough ingredients. That includes: almond flour, peanut butter, maple syrup, and vanilla.
Fold in the chopped trail mix.
Use a spoon to scoop about 1 teaspoon of dough. Use your hands to press it together like dough and then place it into each of the dates. Make sure to press it in firmly so it stays. Place the dates back onto the lined plate.
In a small glass bowl, add the chocolate chips, peanut butter, and coconut oil. Microwave for about 30 seconds. Stir and continue microwaving in 20 second increments, stirring after each time. Continue until the chocolate is smooth and creamy.
Use a spoon to drizzle a good amount of melted chocolate over the tops of each date. Optionally, sprinkle with finely chopped salted nuts or chocolate candies.
Place the plate of dates in the fridge for at least an hour, but better yet two to three hours to harden.
Storage:
Once the dates are harden, transfer them to an airtight container and store in the fridge for up to 10 days or in the freezer for up to two months.
If freezing, allow the dates to sit at room temperature for about 10 minutes before enjoying.
Tips + Modifications:
Make sure to use soft dates. I typically like to take them out of the fridge over night so they are nice and soft for the next day.
If you aren't a peanut butter fan, swap it out for your favorite nut butter or sunflower butter.
These dates must stay refrigerated or else the chocolate drizzle will melt.
Do not use raisins if your trail mix has them. The dates are enough.
If you want more chocolate, you can dip the tops straight into the bowl of melted chocolate.
If you want less chocolate, skip the chocolate drizzle and instead press a few vegan chocolate chips over the top of each stuffed date.
