1 8x8 pan, lined with parchment paper
1 small saucepan *to melt the chocolate
1 medium-large bowl
1 small glass bowl *for the double boiler
For the granola bar layer:
- 1 cup smooth, creamy, all-natural peanut butter
- ⅔ cup pure maple syrup
- 2 teaspoon pure vanilla extract
- 2¾ cups Old-Fashioned oats
- ⅓ cup vegan white chocolate chips *roughly chop them if they are not small
- ¼ cup freeze-dried strawberries, roughly chopped
- ¼ teaspoon salt
For the top chocolate ganache layer:
- 1 cup vegan chocolate chips
- 1 tablespoon all-natural peanut butter
- 1 teaspoon coconut oil
Line an 8x8 baking dish with parchment paper.
In a large bowl, mix together the peanut butter, maple syrup, and vanilla until it is creamy and well-mixed.
Add the remaining ingredients including old fashioned oats, freeze-dried strawberries, white chocolate chips, and sea salt. Give it all a good stir until everything is evenly coated.
Transfer the mixture to the lined pan and firmly press the oat mixture down into the bottom of the pan until you have one even layer. You can use a sheet of parchment paper so it doesn't stick to your hands. Place it in the freezer for 30 minutes or the fridge for 1 hour.
Once the bars have chilled for the appropriate time frame, it's time to make the chocolate ganache. Place all of the chocolate layer ingredients into a small glass bowl. This includes chocolate chips, coconut oil, and peanut butter. Using the double boiler method, place the bowl over a small saucepan with about 2 inches of water. Over medium-high heat, allow the water to come to a boil, and then turn it down to a simmer. Continuously stir the chocolate mixture until it is creamy and smooth. Remove it from the heat. Remove the bars from the fridge or freezer. Remove them from the pan by holding the edges of the parchment paper and pulling the bars out and onto a cutting board. Carefully cut them into 16 even rectangles or the size you desire.
One at a time, dip the bottoms into the melted chocolate and use a fork to gently remove them, scraping the bottoms and fork onto the side of the bowl, and then place them back onto the parchment paper each separated by 1 inch so they do not freeze together.
Use the remainder melted chocolate and with the fork, drizzle the chocolate over the tops of the bars. Transfer the cutting board to the fridge for an hour before enjoying one.
To store: Place the hardened granola bars into an airtight container and in the fridge for up to 7 days. If you are laying the bars, place a sheet of parchment paper over the first layer to avoid the bars from sticking together.
These granola bars must be stored in the fridge so that they do not melt.
