Vegan Cookie Monster Brownies (Healthy & Fudgy)

There’s something extra special about these Vegan Cookie Monster Brownies that makes them both fun and irresistible. Rich, moist, and fudgy, they’re topped with a vibrant superfood blue vanilla frosting and wholesome cookie crumbles for the ultimate healthy vegan treat.

Ingredients

For the brownies

  • 2 tablespoons ground flaxseed
  • 6 tablespoons filtered water
  • 1 cup creamy cashew butter
  • ½ cup pure maple syrup
  • ¼ cup cacao powder
  • ¼ cup coconut sugar
  • 2 tablespoons coconut flour
  • 2 tablespoons plant-based milk
  • 1 teaspoon baking soda
  • teaspoon salt

For the topping

  • 1 cup Elavi Blue Vanilla Frosting-Cashew Butter
  • cup vegan chocolate cookies, crushed *I like to use Simple Mills double chocolate cookies

Instructions

  • Make the flax egg. Combine 2 tablespoons of ground flaxseed with 6 tablespoons of water in a small bowl. Place it in the fridge while you prepare the brownies.
  • Preheat the oven to 350 degrees Fahrenheit. Line an 8x8 pan with parchment paper and then grease it with coconut oil or coconut oil spray.
  • Add all of the brownie ingredients to a large mixing bowl. This includes cashew butter, maple syrup, cacao powder, coconut sugar, coconut flour, plant-based milk, baking soda, and salt. Mix it until creamy and well blended. *Do not overmix.
  • Pour the brownie batter into the prepared 8x8 dish. Spread the batter into an even layer. Bake the brownies for 28-30 minutes.
  • Allow the brownies to completely cool. Then, spread about 1 cup of the Elavi Blue Vanilla Frosting evenly over the top of the brownies.

Notes

Storage:
Place plastic wrap over the 8x8 pan or transfer the brownies to an airtight container and store them in the fridge for up to 6 days. *These brownies must be stored in the fridge.
Tips and Modifications:
Feel free to swap the cashew butter for almond butter.
For an extra chocolatey brownie, mix in mini chocolate chips into the batter before baking.
No blue frosting? Make this Homemade Vegan Chocolate Whipped Cream instead!
Skip the frosting altogether and simply add vanilla ice cream on top, and you are all set! (I will say that the frosting is delicious and makes these brownies fun!)
