Simple Maple Nut Granola
Once you try this homemade Maple Nut Granola you will never go back to the boxed stuff. There is nothing simply better than the combination of flavors of maple syrup, nuts, vanilla, and coconut. This simple granola recipe is vegan and gluten-free and is lightly sweetened.

1 medium-sized bowl
- 3½ cups gluten-free rolled oats
- ¼ cup chopped almonds
- ¼ cup chopped pecans
- 3 teaspoons melted and cooled coconut oil
- ⅓ cup maple syrup
- 1 teaspoon vanilla extract
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
Preheat the oven to 325 degrees Fahrenheit.
Melt the coconut oil in the microwave and set it aside to cool slightly.
Chop the nuts.
Add all of the ingredients to a medium-sized bowl and mix well.
Spread the granola into an even layer over a lined cookie sheet.
Cook in the oven for 22 minutes.
Allow the granola to cool completely and then transfer it to a large mason jar with a lid.
Store in the pantry for up to a week and a half.
*Feel free to switch up the nuts. You can use all almonds, for example, or switch over to walnuts. You can even take the nuts out, but I highly recommend them.
*If you do not like the taste of coconut oil, feel free to substitute it with vegetable oil.
