Peanut Butter Pretzel and Jam Stuffed Dates (vegan)

Equipment

  • 1 large plate lined with parchment paper
  • 1 small saucepan *for double boiler
  • 1 small glass bowl *for double boiler

Ingredients

  • 12 soft Medjool dates, pitted
  • 12 teaspoons strawberry jam
  • 12 peanut butter pretzels
  • cup vegan chocolate chips
  • 1 teaspoon coconut oil

Optional

  • flaky sea salt to sprinkle on top

Instructions

  • Remove the pits and cut the dates in half, lengthwise. Open them wide and flatten them just a bit, and then place them on a plate lined with parchment paper.
  • Spread 1/2 a teaspoon to 1 teaspoon of jam into the bottom of each date, depending on the size of the date. It should be no more than halfway full, leaving enough room for the pretzel.
  • Place one peanut butter pretzel into each date by gently pressing it into the date so it stays in place. It will not go all the way in and will be sticking out.
  • Melt the chocolate chips and coconut oil using a double boiler method (one small saucepan with water at the bottom and a small glass bowl over the top). You can also use the microwave by melting for 20-second increments and then stirring each time. Melt the chocolate until it becomes smooth and remove the bowl from the heat.
  • Take each date and carefully dip the tops into the melted chocolate and then place them back onto the parchment paper. Optionally, sprinkle them with flaky sea salt. Place the dates in the fridge to harden for at least an hour and enjoy!

Notes

Storage: 
Place the hardened dates into an airtight container and into the fridge for up to 10 days.
You can also store them in the freezer for up to 2 months. Allow the dates to thaw at least 10 minutes at room temperature before enjoying.
Tips + Modifications:
Swap out peanut butter pretzels for almond butter instead if you aren't a peanut butter fan.
The jam is optional, but if you decide to use it, opt for a sugar-free brand that is made of only fruit.
Make sure you are working with soft dates.
These dates cannot be left out on the counter for more than 20 minutes, or the chocolate will melt.
If you are putting salt on the tops, work fast before the chocolate hardens.
