High-Protein Vegan Bento Snack Boxes

Equipment

Ingredients

  • 1 large apple, sliced *about 5 slices each
  • juice ½ a lemon
  • pinch of salt
  • 1 cup filtered water *more or less as needed
  • ¾ cup store-bought hummus *1/4 each box
  • 1 large cucumber, peeled and sliced into coins *about 6 slices each
  • ¾ cup pistachios *1/4 cup each
  • 3 nut butter packets *1 for each
  • 3 large and soft Medjool dates, pitted *1 for each
  • 3 teaspoons creamy peanut butter *1 tsp each
  • 3 teaspoons vegan chocolate chips *1 tsp each

Instructions

  • Add the apple slices to a bowl and cover with juice from half a lemon, a pinch of salt, and filtered water. Allow them to soak while you prepare the other ingredients. This will keep them from browning.
  • Prepare the stuffed dates. Make a lengthwise slit in each date and gently open it to create a pocket. Spoon about one teaspoon of peanut butter into the center, then press in roughly a teaspoon of vegan chocolate chips. Repeat until all the dates are filled and perfectly bite-sized.
  • Assemble the Bento boxes. Start with the hummus. Add 1/4 cup of hummus into an even layer into one of four compartments. Then, place about 6 cucumber slices on the top of the hummus.
  • Add 1/4 cup pistachios to the second compartment.
  • Add one stuffed date to the third compartment.
  • Wash the nut butter packets with soap and water and completely dry them off. Add a packet to the bottom of the fourth and last compartment. Dry off the apple slices with a paper towel and add about 5-6 slices on top of the packet.
  • Repeat these steps with all three Bento boxes. Add lids, store them in the fridge until you are ready to enjoy them.

Notes

Storage:
Secure the lids and place the Bento boxes into the fridge for up to 3 days. It makes for a perfect grab-and-go snack or meal for three days straight.
Tips and Modifications:
The cucumber slices can get watery. I recommend patting them with a paper towel and removing the seeds if there are a lot of them before placing them over the hummus.
If the hummus gets a layer of water over the top from the cucumber slices, simply mix the hummus before enjoying.
Wash the nut butter packets with soap and water and completely dry them before placing them in the Bento boxes.
If the nut butter packet is hard from being in the fridge, simply allow it to sit out for 10 minutes and knead with your hands before enjoying.
