Easy Vegan Veggie-Loaded 7-Layer Dip Appetizer Cups

Servings: 5 individual cups
- 1 (16oz) can of vegan refried beans
- 1 (4oz) can diced green chiles
- ¼ teaspoon chili powder, onion powder, cumin, salt
- 2 teaspoons nutritional yeast
- 2 medium carrots, peeled and shredded
- juice from ½ a lime
- 3 mini bell peppers or 1 med/large red bell pepper, diced
- ½ small red onion, finely diced
- hot sauce or salsa to your liking
Mix a can of refried beans, a can of green chiles, and seasonings together until combined.
Grab 5 small ramekins and layer each cup with about 3/4 cup of the refried beans mixture.
Sprinkle about 1/2 teaspoon of nutritional yeast into one even layer as the next layer. You could add shredded cheese instead if you are into that.
Add an even layer of each of the following ingredients: shredded carrots with lime juice, diced bell pepper, and diced onion.
Finish it off with a drizzle of hot sauce or salsa. Enjoy immediately or store in the fridge for later.
Store each cup with a lid or plastic wrap in the fridge for up to 4 days.
Feel free to add any additional toppings like black olives, sour cream, salsa, cashew cream, guacamole, or cilantro.
Do not heat up these cups. They are best enjoyed cold.
You can definitely turn this into a large dip using a larger deep dish instead of single servings.
