Easy Vegan Raspberry and Yogurt Protein Parfaits

Talk about a healthy protein-filled snack or breakfast. These Easy Vegan Raspberry and Yogurt Parfaits are the perfect wholesome plant-based snack. They are easy to make and are lightly sweetened with maple syrup.

  • 1 jar or container

Ingredients

  • cups plant-based vanilla yogurt, unsweetened
  • 2 tablespoons creamy almond butter
  • 20 fresh raspberries
  • 1 tablespoon maple syrup
  • 2 tablespoons sugar-free, diary-free white chocolate chips *Or your favorite variety
  • ½ teaspoon extra virgin coconut oil

Instructions

  • Add 12 raspberries to a small container or mason jar. Use a muddler or an equivalent utensil to mash the berries. 
  • Add in the yogurt, almond butter, and maple syrup. Give it all a good stir. Spread the yogurt into one even layer.
  • Melt the white chocolate. Use a glass bowl and microwave the coconut oil and white chocolate for 20 seconds at a time. Give it a stir after every 20 seconds. You can also use the double boiler method over the stove.
  • Once the chocolate is creamy, with no chunks, use a spoon to drizzle all of the chocolate over the yogurt. If needed, grab a toothpick and even it out a bit. Chop the remaining raspberries and sprinkle them over the top.
  • Cover the container and place it in the fridge for about 30 minutes to an hour and enjoy a hard white chocolate shell! You can also meal prep a few of these and place them in the fridge for up to 3 days.

Notes

This recipe makes two servings. Feel free to split this recipe into two containers or eat only half at a time as I do. 
Do not freeze this yogurt parfait. It will get too hard.
If you like your yogurt on the sweeter side, add an additional tablespoon of maple syrup[. (2 tablespoons total instead of 1.)
