This healthy and vegan version of the viral TikTok crispy fried tacos is the perfect dinner for busy weeknights or lazy weekend dinners. 2tablespoonsavocado oil*for frying the bean mixture
½medium red onion, finely diced
1(15.5oz) can of black beans, rinsed and drained
1½tablespoonstaco seasoning*store bought or recipe below
salt to liking
¼filtered water*vegetable stock works, too
avocado cooking spray
3small corn tortillas
1cupfinely shredded cabbage
1avocado, thinly sliced
hot sauce or salsa
¼cupsliced green onion
Instructions
Heat 2 tablespoons of avocado oil in a saute pan over medium heat. Add chopped onion and cook for about 4-5 minutes, stirring occasionally with a wooden spoon.
Add the rinsed black beans, taco seasoning, and water. Cook for another 2 minutes, stirring occasionally.
Remove the pan from the heat, grab a potato masher, and mash the black bean mixture until everything becomes a pasty, half-smooth, and half-chunky, mixture. They will be a little chunkier than canned refried beans.
Spread a few spoonfuls of the black bean mixture onto one side of a tortilla. You will want to cover the entire tortilla in an even layer. Use the back of your spoon to press down on the black beans to pack them in and help them stick better to the tortilla. *Do not make the layer of beans too thick or too thin, otherwise you will have a hard time getting them to stick to the tortilla. Do this to all three tortillas until the mixture is gone.
Carefully clean off the (hot) saute pan. Turn the stove to medium-high heat. Spray the pan with a layer of avocado cooking spray (or something similar) and place the tortillas bean side down. Cook for 2 minutes or so. While the beans are cooking, use your spatula to continuously press down the edges into the beans. (The corn tortilla likes to roll up on the sides as it gets heated.)
Once the top of the beans have hardened and turned golden brown, gently flip the tortilla so that the black bean filling is facing up and cook the plain side for about 1-1.5 minutes. You are looking for it to just start to brown but nothing more. Carefully use your hands if needed.
Remove the tortillas from the heat and place them on plates. Top them with cabbage, avocado, green onion, sea salt, black pepper, and hot sauce as well as your favorite taco toppings.
Optional homemade taco seasoning:
Place all of the following into a small bowl-1 teaspoon chili powder, 1 teaspoon ground cumin, 1 teaspoon salt, 1/2 teaspoon smoked paprika, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder. (If you like spice, add a dash of cayenne pepper.) Give it all a good mix with a whisk and use as needed.
Notes
These fried tacos are best enjoyed right after cooking. They will become soggy as leftovers in the fridge.
