Cookie Dough Protein Balls (Vegan & No-Bake)

These Cookie Dough Protein Balls are soft, sweet, and loaded with chocolate chips for that classic cookie dough flavor. Made with oat flour, creamy cashew butter, vanilla protein powder, and pure maple syrup, they’re an easy vegan, no-bake snack that comes together in just 10 minutes.

Equipment

Ingredients

  • 1 cup oat flour *You can blend oats to create flour, as well
  • 2 tablespoons vegan vanilla protein powder
  • ¼ cup plus 1 tablespoon creamy cashew butter
  • ¼ cup pure maple syrup
  • 2 teaspoons pure vanilla extract
  • 2 tablespoons plant-based milk, and more as needed
  • 3 tablespoons chocolate chips dairy-free *I Use dairy-free and monkfruit sweetened.
  • 2 tablespoons sprinkles

Instructions

  • Add the oat flour and vanilla protein powder to a large mixing bowl and stir until evenly combined.
  • Next, add in the cashew butter, maple syrup, vanilla, and plant-based milk. Mix until the dough is incorporated. If the dough seems dry, add additional tablespoons of milk.
  • Fold in the chocolate chips and optional sprinkles.
  • Scoop out tablespoon-sized balls of dough and place them in a glass, airtight container.
  • Enjoy immediately or transfer the protein balls to an airtight container and refrigerate until ready to eat.

Notes

Storage:
For the most authentic cookie dough flavor, I recommend cashew butter. Almond butter works well too, but it will give the protein balls a slightly nuttier flavor.
Protein powder brands vary quite a bit in texture and absorbency. Start with 2 tablespoons of non-dairy milk and only add more if your dough feels dry or crumbly.
Use mini chocolate chips if you can find them. Their smaller size works perfectly in bite-sized protein balls and gives you chocolate in every bite.
Pack the dough firmly into your cookie scoop before rolling. This helps the balls hold their shape and prevents them from crumbling.
If your dough becomes too sticky, mix in a small amount of additional oat flour. If it's too dry, add non-dairy milk one tablespoon at a time.
The sprinkles are completely optional. Leave them out for classic chocolate chip cookie dough protein balls or add naturally colored sprinkles for a fun twist.
