All of the ingredients needed to make these trail mix stuffed dates.

The Ingredients

Medjool dates: Make sure to use this type of date. They are soft, and perfect for stuffing.

Almond flour: This flour is the perfect gluten-free base to the peanut butter cookie dough.

Peanut butter: Use creamy, and runny peanut butter. I also recommend all natural.

Maple syrup: Use this natural sweetener to finish off the peanut butter mixture.

Vanilla: Find a high-quality, pure vanilla extract. It really makes a difference.

Trail mix: You can use a mixture of peanuts, almonds, pecans, almonds, chocolate chips, and and chocolate candies. I used peanuts, almonds, and chocolate candies.

A bite has been taken out of one date.

For the chocolate drizzle you will need the following:

Vegan chocolate chips: Use your favorite high-quality chocolate chips.

Coconut oil: This will help the chocolate harden.

Peanut butter: Use creamy, all-natural peanut butter to melt into the chocolate.

Finely chopped peanuts or chocolate: Optionally add chopped toppings to the wet chocolate drizzle for the perfect touch.

Frequently Asked Questions

What types of dates work best for this recipe?

Medjool dates are the best choice because they are large, soft, and naturally sweet. Their chewy texture pairs perfectly with the creamy filling and crunchy trail mix.

Can I use a different nut butter other than peanut butter?

Absolutely. Almond butter, cashew butter, or even sunflower seed butter (for a nut-free option) will work just as well.

What type of trail mix should I use?

Choose a trail mix you love. One with nuts, seeds, and maybe a little dark chocolate. Just make sure it is vegan and unsweetened or lightly sweetened to keep the treat wholesome.

Do I have to use trail mix?

No! A simple combination of salted peanuts and salted almonds will work.

Do these need to be refrigerated?

Yes. Since they contain nut butter, dates, and chocolate, they should be stored in the fridge to keep them fresh and the chocolate firm.

Can I make them without chocolate?

Yes. If you prefer to skip the chocolate drizzle, they are still delicious without it.

The Instructions

Step one: Open all of the dates and place them on a large plate, lined with parchment paper.

Step two: In a medium bowl, combine the peanut butter cookie dough ingredients. That includes: almond flour, peanut butter, maple syrup, and vanilla.

All of the ingredients for the peanut butter dough in a bowl.

Step three: Fold in the chopped trail mix.

The trail mix has been folded in.

Step four: Use a spoon to scoop about 1 teaspoon of dough. Use your hands to press it together like dough and then place it into each of the dates. Make sure to press it in firmly so it stays. Place the dates back onto the lined plate.

The dates have been stuffed with the peanut butter mixture.

Step five: In a small glass bowl, add the chocolate chips, peanut butter, and coconut oil. Microwave for about 30 seconds. Stir and continue microwaving in 20 second increments, stirring after each time. Continue until the chocolate is smooth and creamy.

The bowl of melted chocolate, coconut oil, and peanut butter.

Step six: Use a spoon to drizzle a good amount of melted chocolate over the tops of each date. Optionally, sprinkle with finely chopped salted nuts or chocolate candies.

The dates have been drizzled with melted chocolate.

Step seven: Place the plate of dates in the fridge for at least an hour, but better yet two to three hours to harden.

The dates have been drizzled with melted chocolate and topped with crushed chocolate candies.

Storage

Once the dates are harden, transfer them to an airtight container and store in the fridge for up to 10 days or in the freezer for up to two months.

If freezing, allow the dates to sit at room temperature for about 10 minutes before enjoying.

Tips + Modifications

Make sure to use soft dates. I typically like to take them out of the fridge over night so they are nice and soft for the next day.

If you aren’t a peanut butter fan, swap it out for your favorite nut butter or sunflower butter.

These dates must stay refrigerated or else the chocolate drizzle will melt.

Do not use raisins if your trail mix has them. The dates are enough.

If you want more chocolate, you can dip the tops straight into the bowl of melted chocolate.

If you want less chocolate, skip the chocolate drizzle and instead press a few vegan chocolate chips over the top of each stuffed date.
