About ten years ago, I got real with myself and decided to cut out all of the processed food I was eating. I had a major sweet tooth so it was no easy task.

Finding recipes like these Vegan Cookie Dough Protein Balls was key to my success. I was able to satisfy my craving for sweets and stay healthy and on track with my healthy eating plan. And, you can too!

Use this recipe as a part of your meal prep Sundays. In just ten minutes or less, you can have a batch of these already in the fridge for the week. They are the perfect little treat for a busy weekday.

They are cheap to make. The ingredients are most likely sitting in your pantry as we speak. These protein balls are much more budget-friendly than prepackaged protein bars you find at the grocery store for up to $5.00 each.

The recipe is simple. I don’t know about you, but my favorite recipes are one-bowl, easy to follow, and have simple ingredients.

They are a nutritious snack. With high protein and natural ingredients, you will feel great after eating these little protein balls.

They are kid-friendly. My daughters have a hard time just eating one. They are addictive, and don’t say I didn’t warn you. LOL.

    The Ingredients

    Oat flour: Did you know that you can make oat flour with old-fashioned oats? Simply place the oats in a blender with a lid, and process until flour forms.

    Vanilla protein powder: Use your favorite protein powder. I really enjoy Truvani which has clean and just a few simple ingredients. I would not recommend any other flavor for this recipe.

    Cashew butter: Cashew butter has the perfect cookie-dough flavor, which is why I highly recommend not substituting. However, if you have an allergy, you can also swap it for sunflower butter. I have also made these with almond butter, which works.

    Maple syrup: Use pure maple syrup. Honey will do the trick, too, but maple syrup is recommended.

    Vanilla extract: Use pure vanilla extract and no artificially flavored varieties.

    Non-dairy milk: Use your favorite plant-based milk. I use a blend of cashew, oat, and coconut.

    Chocolate chips: I like to use dairy-free and monk fruit-sweetened varieties!

    Sprinkles: These are optional but highly recommended. There’s just something fun about eating a dessert with sprinkles, right?

    The Instructions

    Step one: In a large bowl, mix together the oat flour and the protein powder.

    Step two: Next, add in the cashew butter, maple syrup, vanilla, and 2 tablespoons of plant-based milk. Mix until the dough is incorporated. If the dough seems dry, add additional tablespoons of the milk, as needed.

    Step three: Fold in the chocolate chips and optional sprinkles.

    Step four: Scoop out tablespoon-sized balls of dough and place them in a glass, air-tight container.

    Step five: You can enjoy them immediately otherwise, they need to be stored in the fridge.

      Tips and Modifications

      You can certainly use almond butter or sunflower butter instead of cashew butter. However, I prefer cashew butter because it gives a nice cookie dough texture and flavor.

      You can use honey instead of maple syrup if needed.

      When you use the cookie scoop to make these balls, make sure to press down on the dough, in the cookie scoop, to pack the dough into a firm ball. If not, they can become crumbly.

      Mini chocolate chips are perfect for this recipe if you can get a hold of them.

      I like to use natural sprinkles without artificial color dyes.

      Storage

      These protein balls should be stored in the fridge. I have never tried storing them in the freezer but I bet that would work! Whatever you do, don’t leave them out. Keep them cold. They should last about 8 days in the fridge.

      • 1 cup oat flour *You can blend oats to create flour, as well
      • 1 scoop vegan vanilla protein powder *or 1 heaping tablespoon
      • ¼ cup plus 1 tablespoon creamy cashew butter
      • ¼ cup pure maple syrup
      • 2 teaspoon pure vanilla extract
      • 3 tablespoons plant-based milk, and more as needed
      • 2-3 tablespoons chocolate chips *I Use dairy-free and monkfruit sweetened.
      • 2 tablespoons sprinkles

      Instructions
