I’ve been making versions of this easy polenta dinner for years. It’s always been one of those simple meals I could throw together quickly with a few wholesome ingredients, especially on busy weeknights.

Add the sliced zucchini, season with salt and pepper, and stir to combine. Polenta can easily stick to the pan, so gently stir or toss everything about every 30 seconds, being careful not to break apart the polenta pieces. Continue cooking until the zucchini is tender and the polenta is heated through and lightly golden.
