How to Eat These 7-layer Dip Cups

As a dip: Grab a bag of your favorite corn chips, celery sticks, or tortilla chips, or make a batch of homemade tortilla chips and get dipping!

With a spoon: It’s always a good idea to have quick meals on hand that have little to no prep work involved, at least I love having options in my fridge. Grab a spoon and dig in. No need to add chips or a tortilla, you can enjoy this easy appetizer by itself, it’s that good.

In a tortilla: One of my favorite ways to make this a complete and hearty meal is to scoop the layers into a fresh tortilla, roll it up, and eat it like a taco! It really becomes a tasty appetizer or meal with tortillas in the mix.

What’s in Vegan 7-Layer Dip?

Refried beans-I like to use a can of vegan refried beans or find a brand with minimal ingredients. I would not recommend black beans. 

Bell peppers-Use mini bell peppers or one large red bell pepper for this recipe.

Carrots-Use a cheese grater to shred the carrots. You’ll mix in the lime juice into the carrots to give them a Mexican flare. 

Green chiles-Grab a small can of diced green chiles for this recipe as well.

Red onion-I prefer the flavor of red onion however you can also use green onion as well.

Nutritional yeast-This has a great cheesy flavor and is packed with nutrition. What a great cheese alternative. If you are into cheese, you can add that to the cups as well.

Lime juice-You will use the juice of half a lime to mix into the carrots. It really brings out a nice citrusy flavor that works well in this recipe.

Mexican spices-This includes chili powder, cumin, onion powder, and salt.

How to Make Veggie-Loaded 7-Layer Dip

Step one: Mix a can of refried beans, a can of green chiles, and seasonings together until combined.

Step two: Grab 5 small ramekins and layer each cup with about 3/4 cup of the refried beans mixture. 

Layer the bean mixture into the bottom of individual cups.

Step three: Sprinkle about 1/2 teaspoon of nutritional yeast into one even layer as the next layer. You could add shredded cheese instead if you are into that.

Next, add nutritional yeast.

Step four: Add an even layer of each of the following ingredients: shredded carrots with lime juice, diced bell pepper, and diced onion.

Next add carrots and the rest of the veggies.

Step five: Finish it off with a drizzle of hot sauce or salsa. Enjoy immediately or store in the fridge for later.

Top with hot sauce.

Storage Instructions

Simply add the lid to a mason jar or plastic wrap to each of the cups and place them in the fridge for up to 4 days. What a perfect grab-and-go snack,

Tips + Modifications

Feel free to add any additional toppings such as vegan sour cream, black olives, salsa, cashew cream sauce, homemade guacamole, Mexican cheese, or fresh cilantro.

You could always turn this into one large dip by using a medium-sized bowl or deep dish.
