As a vegan, I am always looking for easy and nutritious breakfast ideas as well as high-protein snacks. These vegan yogurt parfaits hit the spot and keep me full for hours. With fresh raspberries and creamy plant-based yogurt, they are sure to be your new favorite healthy breakfast.

Ingredients for Easy Vegan Raspberry and Yogurt Protein Parfaits
Plant-based yogurt-Grab a container of your favorite yogurt whether it’s oat, almond, or coconut yogurt or Greek yogurt if you enjoy dairy.
Creamy almond butter-Use natural almond butter that is more on the runny side than hard. Check the ingredient list and find a brand that only uses almonds and maybe sea salt for their recipe.
Fresh raspberries-If you do not have raspberries on hand, you can use finely chopped strawberries or fresh blueberries.
Maple syrup-Use a high-quality brand that only contains all-natural maple syrup and no additional ingredients.
For the simple hard white chocolate topping, you will need:
White chocolate chips-You can use dairy-free and sugar-free varieties or your favorite brand, You will only need a few tablespoons. Feel free to use regular chocolate if that’s what you prefer.
Coconut oil-This helps the chocolate harden once you spread it over the top of the yogurt. Try to use extra virgin coconut oil.
How to Make Vegan Parfaits
Step one: Add the raspberries to a small container or mason jar. Use a muddler or an equivalent utensil to mash the berries.
Step two: Add in the yogurt, almond butter, and maple syrup. Give it all a good stir. Spread the yogurt into one even layer.
Step three: Melt the white chocolate. Use a glass bowl and microwave the coconut oil and white chocolate for 20 seconds at a time. Give it a stir after every 20 seconds. You can also use the double boiler method over the stove.
Step four: Once the chocolate is creamy, with no chunks, use a spoon to drizzle all of the chocolate over the yogurt. If needed, grab a toothpick and even it out a bit. Chop the remaining raspberries and sprinkle them over the top.
Step five: Cover the container and place it in the fridge for about 30 minutes to an hour and enjoy a hard white chocolate shell! You can also meal prep a few of these and place them in the fridge for up to 3 days.
Tips + Modifications
This makes a serving for two. If you would like to split this recipe into two containers, go for it. I eat half and leave the rest for the next day.
Do not place the containers in the freezer. The yogurt will get very hard.
If you like it a little sweeter, try adding an additional tablespoon of maple syrup to the yogurt.
