These simple chocolate chip cookie dough protein bites are easy to make, delicious, and perfect for meal prepping. You can store them in the freezer for a grab-and-go energy snack.

I don’t know about you but I love having access to a healthy snack that tastes great. That’s why I love these healthy sweet treats. Made with only a few wholesome ingredients, you’ll enjoy a vegan protein snack while satisfying your sweet tooth. 

Why These Chocolate Chip Cookie Dough Protein Bites are the Best

​Simple: You’ll only find simple ingredients in this recipe. If pronouncing all of the ingredients is important to you, then you’ve come to the right spot. You won’t find any junk in these bites like cane sugar, white flour, or vegetable oils. 

Easy: This is a quick snack that you’ll whole family will love. The hardest part is waiting for them to harden in the freezer. While it’s not necessary, the texture is perfect from right out of the freezer.

Delicious: I love how small and cute these protein bites are but I love how they taste even more. My girls can’t stop eating them as an afternoon snack.

Healthy: Filled with plant-based protein, healthy fats, and fiber, these energy bites are a nice mid-day snack, post-workout snack, or evening dessert. Nothing like feeling food after eating raw cookie dough, LOL.

Meal prep: Make a batch of these healthy treats on Sunday for the week ahead. Trust me, you will be happy you did.

How to Eat These Protein Bites

You can enjoy these protein snacks any time of the day. My favorite ways to enjoy them include:

After dinner as a dessert.

For a pre-workout snack. 

For a post-workout snack.

On top of nice cream for “cookie dough nice cream”.

On the go in the car for a mid-day snack.

In the morning with your smoothie for breakfast.

​The Ingredients

Almond flour-Want to know why I love almond flour? It’s better than most flours because it’s incredibly nutritious, it’s gluten-free, and keto-friendly. It works nicely for the base of these cookie dough protein bites.

Vanilla protein powder-I have only tried vanilla, which I recommend but I am sure chocolate protein powder would work. I get asked all the time what vegan protein powder brand I recommend. I like to use the brand, Trivani for high-quality plant-based protein powder.

Coconut oil-Make sure to use cold-pressed and unrefined. This type of oil is considered healthier because the way it is made will preserve more of the oil’s nutrients.

Maple syrup-I am talking pure maple syrup, not pancake syrup. Maple syrup is a great sweetener choice as it has minerals and antioxidants compared to processed white sugar.

Plant-based milk-Use your favorite unsweetened, dairy-free milk such as oat milk, coconut milk, or almond milk. 

Almond butter-I like to use all-natural, no sugar added, organic varieties and I usually purchase mine from Costco. I have not tried this recipe with any other variety of nut butter such as peanut butter. If you try it, let me know how it goes.

Vanilla-This gives it the perfect little finish. Don’t skip out on this and make sure to use a high-quality pure vanilla extract.

Chocolate chips-I like to use sugar-free and dairy-free chocolate chips. Vegan chocolate chips are tasty. Find the right quality brand and you will never know that they are vegan. I also recommend using mini chocolate chips.

Sprinkles-I purchase mine from Whole Foods or Amazon. I prioritize avoiding color dyes, so I recommend using a naturally dyed variety.

​The Instructions

You guys, I wasn’t joking when I said that you could make these in 5 minutes. Grab yourself a bowl and get ready to make these simple bites!

Step one: Line a small baking dish or baking tray with parchment paper. 

Step two: Start by slightly melting your coconut oil in the microwave and set it aside to cool. 

Step three: Add all of the ingredients to a large bowl and give it all a good mix until everything is evenly incorporated. Start with the dry ingredients and then add the wet ingredients.

Step four: Transfer the large dough ball to a 9×7 or 8×8 dish. Use your hands to press the dough into an even layer.

Step five: Add the chocolate chips and sprinkles and press them down into the dough. Place it into the freezer for about two hours.

Step six: Remove the dish from the freezer. Carefully lift up the parchment paper from the tray and place it on a cutting board. Cut the dough into small, bite-sized squares.

How to Store Chocolate Chip Protein Cookie Dough Bites

Gently place them in an airtight container and store them in the freezer. They will last up to 2 months in the freezer. 

You can definitely store them in the fridge for a softer texture. I prefer the freezer.

Tips + Modifications

​If these cookie dough bites reach room temperature, they may become crumbly. Keep them in the freezer and grab them as you want to enjoy them.

You could switch out the almond butter for cashew butter or sun butter. Peanut butter would work but it gives it a distinct flavor so I would recommend a more neutral nut butter.

I am not sure about any other flours. I would try to stick to almond flour.

Ingredients

  • 1 cup almond flour
  • 1 scoop vanilla protein powder (plant-based)
  • teaspoon sea salt
  • cup creamy almond butter
  • 2 tablespoons coconut oil, melted and slightly cooled
  • 2 tablespoons pure maple syrup
  • ½ teaspoon pure vanilla extract
  • 2 tablespoons plant-based milk

Toppings:

  • 2 tablespoons mini dairy-free, unsweetened chocolate chips
  • 1 tablespoon sprinkles

Instructions

  • Line a baking dish with parchment paper.
  • Slightly melt the coconut oil in the microwave and set it aside to cool.
  • Add all of the ingredients to a bowl, starting with the dry and then the wet. Mix until everything is evenly incorporated.
  • Transfer the dough to the lined baking dish. Press the dough with your hands into an even layer.
  • Add the chocolate chips and sprinkles over the top and press them into the dough until they stick.
  • Place the dish into the freezer for about 2 hours.
  • Remove from the freezer, remove the dough by carefully lifting up on the parchment paper, and then place it on a cutting board. Cut into small squares.
  • Store in an airtight container in the freezer for up to two months.
