They are wholesome. Made from only a few ingredients, these vegan desserts are the ideal way to end your night.

They are delicious. Honestly, I prefer one of these stuffed dates over a piece of chocolate candy. If you love peanut butter, you’ve got to try these Butterfinger dates also!

They are perfect for meal prep. You will love how putting 20 minutes forward will bring you to weeks worth of dessert.

They are vegan. You won’t find any dairy in these little treats.

All of the ingredients needed to make these dates.

The Ingredients

Medjool dates: You’ll want to make sure you have removed the pits and that your dates are soft. Otherwise, leave them out on the counter 24 hours before making this recipe.

Peanut butter pretzels: I like to purchase these from Whole Foods or Trader Joe’s.

Jam: Strawberry jam with no added sugar is highly recommended. This date recipe is already sweet so stay away from sugar-filled jams.

Vegan chocolate: Use your favorite dairy-free chocolate chips to melt down and dip your dates into.

Coconut oil: This is the magic ingredient that will allow the chocolate to harden and become smooth.

Optional: Flakey sea salt to sprinkle on top of the chocolate-dipped dates.

Frequently Asked Questions

Is there a substitute for jam? Yes! You can either skip the jam altogether, or use chia jam or fresh mashed raspberries.

Can I make this refined sugar-free? Yes! It’s all about the peanut butter pretzels you choose. Everything else is all natural with no added sugar.

Can I serve these room temperature? Not really. These dates should not be left out at room temperature for more than 20 minutes or else the chocolate will start to melt.

I can’t have peanut butter. Now what? No problem! Switch to almond butter-filled pretzels instead.

Can I freeze them? Yes! Place the dates in an airtight container or a large Ziplock and store them in the fridge for up to two months!

The Instructions

Step one: Remove the pits and cut the dates in half, lengthwise. Open them wide and flatten them just a bit, and then place them on a plate lined with parchment paper.

Step two: Spread 1/2 a teaspoon to 1 teaspoon of jam into the bottom of each date, depending on the size of the date. It should be no more than halfway full, leaving enough room for the pretzel.

Step three: Place one peanut butter pretzel into each date by gently pressing it into the date so it stays in place. It will not go all the way in and will be sticking out.

Step four: Melt the chocolate chips and coconut oil using a double boiler method (one small saucepan with water at the bottom and a small glass bowl over the top).

You can also use the microwave by melting for 20-second increments and then stirring each time. Melt the chocolate until it becomes smooth and remove the bowl from the heat.

Step five: Take each date and carefully dip the tops into the melted chocolate and then place them back onto the parchment paper.

Optionally, sprinkle them with flaky sea salt. Place the dates in the fridge to harden for at least an hour and enjoy!

The dates have all been dipped in chocolate and are on a plate and ready to go into the fridge to harden.

Storage

Place the hardened dates into an airtight container and into the fridge for up to 10 days.

You can also store them in the freezer for up to 2 months. Allow the dates to thaw at least 10 minutes at room temperature before enjoying.

Tips + Modifications

Swap out peanut butter pretzels for almond butter instead if you aren’t a peanut butter fan.

The jam is optional but if you decide to use it, opt for a sugar-free brand that is made of only fruit. I recommend either strawberry or raspberry varieties.

Make sure you are working with soft dates.

These dates cannot be left out on the counter for more than 20 minutes, or the chocolate will melt.
