Maple syrup: This is my favorite natural sweetener. The flavor, the nutrients, and the way it perfectly upgrades my recipes, maple syrup is the way to sweeten, in my opinion.
Protein powder: Grab a high-quality strawberry-flavored, plant-based protein powder for this protein pudding. It’s important to find a brand that uses no artificial or processed ingredients.
Vanilla extract: You will want to use a high-quality pure vanilla extract. It really does make all of the difference.
Optional-All-natural red food dye: This is a fun way to make your yogurt cups a pretty pink color. I like to serve these around Valentine’s Day, for example.
Fresh strawberries: Chopped strawberries add a burst of fresh flavor and a juicy crunch to these pudding cups. This is really what makes these sweet treats even tastier.
For the magic shell top layer, you will need the following ingredients:
White chocolate chips: Grab a bag of dairy-free chocolate chips to create that perfect hard shell over the protein yogurt. Yes, dairy-free white chocolate chips do exist.
Coconut oil: You will only need a small amount to create that hard shell effect. Don’t worry, you shouldn’t taste a coconut flavor.
Optional sprinkles: Try to find sprinkles that use fruit and vegetable juices to dye the sprinkles instead of artificial coloring.
The Instructions
Step one: Mix yogurt, maple syrup, vanilla extract, and protein powder with a whisk until it is nice and creamy. *You don’t want any protein powder chunks.
Optionally, add 10-15 drops of natural red food dye and stir until the yogurt mixture is an ideal even color.
Step two: Fold in the chopped strawberries.
Step three: Transfer the mixture evenly into four small bowls. Use a spatula or the back of a spoon to smooth the tops evenly. Place them in the fridge for about 30 minutes.
Step four: Make the magic shell layer by adding the coconut oil and white chocolate chips to a small microwave-safe bowl. Microwave for 20 seconds, stir, and repeat until the mixture is creamy and no chunks remain. *Do not overheat. Allow the mixture to cool for 1-2 minutes.
Step five: Spread a thin layer of the melted chocolate onto the top of each of the four bowls of pudding. Quickly and optionally add sprinkles before the magic shell starts to harden. Cover the bowls with plastic wrap and place them in the fridge for about 5 minutes before enjoying.
Pro Tips to Ensure Your Magic Shell Cracks Perfectly Every Time
Make sure your magic shell cracks every time with these tips I have tested out.
Allow the melted chocolate and coconut oil mixture to cool slightly for about 1-2 minutes before placing it onto the top of the yogurt.
Use the back of a spoon to apply an even layer over each of the yogurt bases.
Only apply a thin layer. The thicker it is, the harder it will be to crack.
Allow the yogurt to sit out of the fridge for a few minutes before trying to crack it. This will allow the magic shell layer to soften a bit.
Using the side of a spoon, with some force, tap the center of the hardened chocolate a few times until it has cracked into a few pieces.
Tips + Modifications
Feel free to use your favorite plant-based yogurt. If you eat dairy, I recommend Greek yogurt.
You can mix in your favorite fresh fruit instead of strawberries. Some ideas include slices of ripe bananas, fresh blueberries, or raspberries.
Pro tip: Make sure to whisk the yogurt mixture well to avoid any clumps. You want the yogurt base to be very creamy.
If you like peanut butter, feel free to mix in a tablespoon into the yogurt pudding mixture! Yum!
