Healthy Pumpkin Creamer
This creamy and dreamy Healthy Pumpkin Creamer is all you need for your warm cup of joe this fall. It’s dairy-free, healthy, and easy to whip up in the blender. Make it on Monday and it will last you all week long in your fridge. Ditch the sugar and artificial flavor-filled, store-bought creamer because this recipe is so much tastier and healthier!
We can thank Starbucks for the pumpkin spice craze. It wasn’t until they came out with their pumpkin spice latte that the trend exploded amongst the young and old alike. Now, every year, I swear it comes out earlier and earlier. It kind of feels wrong to drink a pumpkin spice coffee drink on September 1st when California is in the thick of the summer heat.
Pumpkin Spice Lover?
What’s not to love about a fall-inspired coffee drink? Well, you know what you shouldn’t love? All of the artificial ingredients, extra calories, and sugar are what you shouldn’t like. Waking up and starting your day with a healthy cup of coffee, is what your body needs!
Let me tell you all of the reasons why you should love this Healthy Pumpkin Creamer for your coffee.
First, it is so darn delicious. I don’t think I have ever tried a coffee creamer that was this thick and creamy! Yum! The subtle hint of fall spices is the perfect balance for me. I never like the pumpkin spice flavor to be too overpowering.
Second, it is so simple to make. There’s nothing better than a quick blender recipe. It’s easy to make, the ingredients are simple, and the cleanup is fast.
Third, it’s made from whole, natural ingredients. What if I told you that this creamer is great without any added sugar?! But if you must, a simple date will do the trick.
Fourth, it is great for meal prep. I like to make a double batch of this healthy coffee creamer on Sundays and store it in the fridge for my coffee all week long.
Fifth, it’s easy to store. Just add the creamer to a mason jar or glass jar, secure a lid, and place it into the fridge. It’s that easy. It should last about a week in the cold fridge.
What are the Ingredients?
The simple recipe calls for whole, natural ingredients and it couldn’t be easier to make. Grab a pen and paper, and jot these down. You will need:
Plant-based milk-I like to use a combination of cashew and oat milk because they produce the creamiest result. But, go ahead and use whatever milk you prefer and have on hand.
Canned coconut milk or coconut cream-Place the can in the cold fridge the night before making this healthy pumpkin creamer so that the thickest part becomes solid. That is the part of the cream or milk that you should use for this recipe because it will make the creamer thick and creamy.
Pumpkin puree-Use organic canned pumpkin puree for this recipe. This is what gives it the creamy pumpkin flavor and texture.
Pumpkin pie spice-You can’t have a pumpkin recipe without pumpkin pie spice, right? You will only need a little bit. If for any reason you do not prefer this spice, go ahead and use cinnamon only.
Cinnamon-I love adding this additional spice. Cinnamon tastes so lovely in coffee, am I right?
Vanilla extract-This ingredient really helps to balance out all of the flavors. It is just a must-have when it comes to coffee creamers. Use a high-quality, real vanilla extract.
Optional natural sweetener-You can use real maple syrup, honey, or a date. I prefer no sweetness but if you enjoy a hint of sweetness, definitely make sure to use one of these healthy, and natural options.
How to Make This Vegan Creamer
No joke, this is the quickest creamer you’ll ever make. Check out how easy it is.
Step one-Add all of the ingredients to a high-speed blender.
Step two-Bend on high until it becomes smooth and creamy.
Step three-Transfer the mixture to a glass mason jar with a lid.
Step four-Store the creamer in the fridge for up to one week.
How to Make Pumpkin Spice Coffee
Now to the best part. Let’s put together a pumpkin spice coffee.
Start by adding half a cup of Healthy Pumpkin Creamer, or whatever your heart desires, to a small saucepan. Heat it over medium heat just before simmering. Remove it from the heat.
To a high-speed blender, add the warm creamer and 1 cup of hot, freshly brewed coffee. Blend it all up until froth forms. Bam, you’ve got yourself a Pumpkin Spice Latte replacement! And, it tastes even better!
Tips + Modifications
It’s up to you if you want a hint of sweetness or not. My top choice is using a pitted date to naturally sweeten it. Otherwise, a bit of maple syrup will do the trick or you can leave it out completely.
When you go to use your creamer straight out of the fridge, make sure to give it a good shake, with the lid secured, of course.
