My Love For Peanut Butter and Chocolate
There are just some things that always remind us of the best holiday memories…Reeses Eggs do just that for me. I can remember digging into my Easter basket and choosing that delicious chocolate egg to devour first. Honestly, there was nothing better to me than the taste of that candy and licking my chocolatey fingers afterward.
When I started on my health journey, around 28 years old, I began to focus on recreating my favorite desserts in a healthier version. You better believe that this was one of my first missions! To create one of my childhood favorites without all of the junk.
Not to mention, Reese’s Eggs have nearly two-thirds more calories compared to the basic Reese’s Peanut Butter Cup. When I found out how simple they are to make, I had to try them out!

The Ingredients
Get your little helpers ready and grab the following ingredients.
Peanut butter: This nut butter works best when it is at room temperature or at minimum, nice and creamy. If needed, remove your natural peanut butter from the fridge 30 minutes to an hour before using it.
Maple syrup or honey: Unlike the classic Reese’s peanut butter eggs that use refined sugar, this copycat recipe only uses wholesome and natural sweeteners.
Coconut flour: Definitely do not replace this with all-purpose flour or even oat flour. It really works best with coconut.
Dark chocolate or milk chocolate: You can certainly use any form of chocolate from chocolate chips to a chocolate bar. As long as it melts, you are good.
Coconut oil: I love how this wholesome ingredient allows the chocolate to harden, forming a chocolate shell over the peanut butter filling.
Sprinkles: The best part about homemade Reese’s eggs is that they look prettier because of the sprinkles!

The Instructions
Step one: Add parchment paper or wax paper to a plate.
Step two: To make the peanut butter mixture, mix the peanut butter, maple syrup or honey, and coconut flour in a medium-sized mixing bowl.
Step three: Use a cookie scoop to place one scoop into your hand and form an egg shape.
Step four: Place eggs on the plate and place them in the fridge or freezer for at least an hour.

Step five: Once the healthy Reese’s eggs are ready, melt the coconut oil and chocolate chips by using the double boiler method on the stove.
Step six: Using two forks, dip the eggs into the melted chocolate and make sure to cover the entire egg.
Step seven: Place each egg onto the parchment paper. Top with sprinkles, if desired.
Step eight: Put them into the fridge. Once the chocolate is hardened, transfer the eggs to an airtight container with a lid. Keep them in the fridge.

How Long Will They Last?
These chocolate peanut butter eggs will last 2 weeks in the fridge and 2-3 months in the freezer. If you want the best texture, I recommend storing them in the fridge.

Equipment
- 1 plate, lined with parchment paper
- 1 medium-sized mixing bowl
Ingredients
- 1 cup creamy, natural peanut butter
- 2/3 cup maple syrup or honey
- 2/3 cup coconut flour
- 2/3 cup dark chocolate (I love Lilly's chocolate chips) *or milk chocolate
- 2 teaspoons coconut oil
- 4 tablespoons sprinkles
Instructions
- Add parchment paper to a large plate.
- To make the peanut butter mixture, add the peanut butter, maple syrup, and coconut flour to a medium-sized bowl. Using a spatula, mix it all up until it is thick and creamy.
- Using a cookie scoop, place one scoop into your hand and form into an egg shape.
- Place eggs on the plate and put them in the fridge or freezer for at least an hour.
- Once the healthy reese's eggs are ready, melt the coconut oil and chocolate chips over a double broiler on the stove.
- Using two forks, dip the eggs into the melted chocolate and make sure to cover the entire egg.
- Transfer each of the eggs to the parchment paper. Top with sprinkles, if desired.
- Place them into the fridge. Once the chocolate is hardened, transfer the eggs to an airtight container with a lid. Keep them in the fridge.

These are sooo delicious!! I used an Easter egg mold & filled with a thin layer of colored chocolate, the peanut butter mixture, & then a thin layer on top to close the egg. After being in the fridge to harden, they popped out of the silicone mold easily. Iโm putting in clear bags for an Easter bag for all the cousins & I know theyโll be a hit! My husband & boys are raving about them & i love that theyโre eating these instead of Reeseโs eggs with a bunch of other ingredients that arenโt necessary. Yummmm!!
