Pineapple-You will also need to freeze fresh pineapple chunks if you do not have any on hand. I like to purchase mine from Trader Joe’s.

Coconut cream-Place the can of coconut cream in the fridge to harden up a bit before using it for this dairy-free ice cream.

Vanilla extract-Make sure to use a pure form instead of imitation vanilla.

Step one-Place all of the ingredients into a high-speed blender or food processor. Blend until it is completely smooth and creamy. Add a teaspoon of additional orange juice as needed to get it to the desired consistency.

Step two-Eat immediately or grab a loaf pan or a rectangular deep airtight container and pour the blended mixture into the dish. Use a spatula to smooth it out into one layer. Add a lid or plastic wrap and place it in the freezer for about an hour to 1.5 hours. Then, it will be ready to eat.

How to Eat and Store Nice Cream

There’s nothing like an easy recipe that is simply poured into a pan or container and thrown into the freezer. It’s so easy to store.

This frozen nice cream is best eaten right away or after 1-1.5 hours in the freezer. I highly recommend eating it within the first 2 hours. After that, it becomes pretty hard in the freezer.

If you do choose to save it and eat it another time, be prepared to thaw the pan of nice cream for at least 30 minutes before trying to scoop it.

Ingredients

  • 2 cups frozen orange slices *Peel oranges, lay slices on a plate and freeze for at least 2-4 hours.
  • ½ cup frozen pineapple chunks *I purchase them from Trader Joe's
  • 1 can full-fat coconut cream *Place in the fridge the night before
  • 2-3 tablespoons orange juice *Plant based milk or water can work as a substitute
  • 2 tablespoons pure maple syrup
  • 1 teaspoon pure vanilla extract

Optional

  • 2-3 tablespoons finely shredded coconut

Instructions

Notes

I highly recommend eating this nice cream right away or within 1.5 hours in the freezer.  
It will become hard after two hours in the freezer and the texture will change, even if thawed.
I recommend placing the can of coconut cream in the fridge and the oranges in the freezer the night before making this recipe.
You can substitute coconut cream with a can of coconut milk, if needed.
