Dairy-Free Lemon Blueberry Overnight Oats
These Lemon Blueberry Overnight Oats are easy to make and are perfect for meal prepping. A filling and refreshing protein breakfast that will keep you on your toes with energy all day long.

What Are Overnight Oats?
Overnight oats are a high-protein, hearty, and make-ahead oat-based breakfast in a jar. You simply throw all of the ingredients into the jar, give it a stir, and it into the fridge for the next morning.
Overnight oats are easy to change up, also. You can add any ingredients to the jar from strawberries, to bananas, to nuts, to chocolate.
What’s to Love About Lemon Blueberry Overnight Oats?
They are simple to make. There’s nothing like taking 5 minutes to make a few jars of these delicious jars of oats. There’s no mess involved as you just throw all of the ingredients straight into the jar, give it a stir, and add the lid.
They are super healthy. Sweetened naturally by dates, this breakfast has low sugar, high protein, and high fiber. Plus, you’ll get a serving of fruit from the blueberries on top.
There’s an extra special layer of yogurt. Most traditional overnight oats do not have this additional layer. It adds creaminess, more flavor, and more protein which makes this breakfast option delicious!
They are great for meal-prepping. Make a few on Sunday night for the week’s breakfast. There’s nothing like a fridge full of grab-and-go breakfast options for a busy parent! Am I right?
They are hearty. I know you have heard this before. Breakfast is the most important meal of the day and it is crucial that your meal fills you up and gives you energy through lunch. These oats will do just that!
Ingredients for Overnight Oats
–Old-fashioned oats: Do not use any other type of oats for this recipe. Stick to the traditional oats for this one.
–Plant-based milk: I like to use a combination of cashew, oat, and coconut for the creamiest milk alternative.
–Ground flaxseed: This ground seed thickens when combined with a liquid which helps to bring the overnight oats to the perfect consistency.
–Vanilla extract: One of my favorite additions to overnight oats. The vanilla flavor balances out the ingredients nicely.
–Date paste: This is a wonderful, all-natural way to sweeten anything that needs sugar.
–Lemon juice and lemon zest: I love this refreshing addition to these overnight oats.
–Plant-based yogurt: The creamier the better for this yogurt. Also, make sure to purchase an unsweetened variety. Otherwise, leave out the date paste.
–Frozen blueberries: I recommend using small, wild blueberries for their texture, taste, and health benefits.
How To Make This Best Lemon Overnight Oats in a Jar
Step one-Make the date paste. To boiling water, add about 8-10 pitted dates. Allow it to sit for at least ten minutes while you prepare the overnight oats. *Make sure you are using soft dates. If your dates are harder, you’ll need to soak them in water, and place them in the fridge overnight.
Step two-Once your dates are done soaking, drain the water into a measuring cup. Place the dates and about 1/3 cup of water into a high-speed blender. Blend until the dates come to a smooth paste with no date chunks. Add about a teaspoon of water at a time if it needs more.
Step three-(Start here if you are using maple syrup). Place the following into a glass mason jar: old-fashioned oats, plant-based milk, ground flaxseed, date paste, vanilla extract, zest from 1/4 a lemon, and about 1 teaspoon of lemon juice. Use a spoon to mix it up until everything is incorporated.
Step four-Grab the container of plant-based yogurt, and add zest from 1/4 a lemon and 1 teaspoon date paste. Stir it up and then pour it over the top of the overnight oats in the jar. Even it into one layer. Place the lid on the jar and into the fridge overnight.
Step five-In the morning when you are ready to eat your lemon blueberry overnight oats, grab it from the fridge and add frozen blueberries over the top. Get yourself a spoon and dig in!
Tips + Modifications
Feel free to swap ground flaxseed for chia seeds. They both work the same way.
This recipe is great for making several jars at a time for the perfect meal prep breakfast.
If you do not have time or interest in making the date paste, feel free to swap it out with maple syrup.
How to Store Overnight Oats
Overnight oats must be stored in the fridge until you are ready to eat them. I would not recommend putting them in the freezer. (I have never tried it, though).
The overnight oats should last up to 5 days in the fridge.
Where to Find the Ingredients For Overnight Oats
You can find all of the ingredients for this recipe at your local health food store. I personally shop at Trader Joe’s which carries everything. A few products I recommend purchasing are the organic wild blueberries in the frozen section, the organic creamy cashew yogurt, and their container of organic pitted dates.
