This recipe takes meal prep to a whole different level. Dessert time is super exciting when these healthy vegan candies are sitting in the fridge!

I like to make a batch or two of these delicious candies and store them in my freezer. You can enjoy them right out of the freezer because it still stays the perfect consistency and does not get too hard.

The Simple Ingredients

Peanuts-Look for dry roasted and organic varieties. Unsalted brands are my recommendation for this recipe.

Chocolate chips or chocolate bar-You can use any form of dairy-free chocolate, from bars to chips.

Peanut butter-You will want to use smooth, creamy, and all-natural peanut butter. In other words, make sure that peanuts are the only ingredient.

Coconut Oil-You will only use a little bit of coconut oil and you will not taste it in this recipe. This ingredient will help harden the chocolate.

Flakey salt-Topping the chocolate peanut clusters with a pinch of salt is honestly the best part. Try not to skip this step.

How to Make These Chocolate Covered Peanuts

Step one: Line a cookie sheet with parchment paper.

Step two: Set up a double boiler to melt the chocolate. Grab a small saucepan and fill it with about 2 inches of water. Place a glass bowl on top of the saucepan. Make sure the bowl is big enough that the saucepan holds it up. Place dairy-free, milk or semisweet chocolate chips into the glass bowl. Turn the stove on high heat. Once the water boils, turn the heat off. Stir the chocolate frequently once it begins to melt.

Step three: Dip a spoon into the melted chocolate and drizzle a little onto the parchment paper. Using the back of the spoon, spread it out into a 1.5-inch circle. You’ll want to make 4 rows of 3 to make 12 total.

Step four: Place teaspoon-sized portions of creamy peanut butter on top of the chocolate circles. Make sure the peanut butter is in the center of the chocolate. Also, make sure you are using peanut butter that has been stored in the fridge. That way you are working with peanut butter that is harder and not runny.

Step five: Carefully remove the glass bowl from the saucepan with oven mitts. Pour the raw peanuts into the melted chocolate and stir it up until the peanuts are fully and evenly covered in chocolate.

Step six: Using a large cookie scoop, place 2 tablespoons of this mixture over each portion of peanut butter.

Step seven: Sprinkle a little flaked sea salt over each chocolate candy.

Step eight: Immediately place the cookie sheet into the fridge for at least 2 hours to harden.

How to Store These Candies

You will want to place the hardened chocolate candies into an airtight container. Place the container in the fridge. 

These candies will last in the fridge for up to 2 weeks. You can also store them in the freezer for up to 2 months.

Tips and Modifications

The selection of chocolate available is overwhelming. You can’t go wrong with dairy-free vegan chocolate, creamy milk chocolate, or rich dark chocolate chips. Some of my favorite brands that are best sellers are Lily’s baking chips, Lakanto’s sugar-free chocolate chips, and Hu no added sugar chocolate chips. I do not recommend white chocolate.

I have not tried other varieties of nuts but I would assume almonds would work, as well.

  • 1-2 tablespoons flakey sea salt *Use regular sea salt if needed

Instructions

*I have not tried other varieties of nuts in this recipe.  I would recommend sticking with peanuts.  Almonds could work.
