Creatively building a vegan bagel can be hard to do. I am always dreaming up a vegan breakfast but I need it to be a quick one as a busy mom. The flavors are just right on each of these six bagels, you’ll be amazed how much you enjoy each of them. Additionally, they are filling and easy to throw together.

Indeed the question is, how do you decide which one to try first? It depends if you are in the mood for savory or sweet. There are 3 of each, fortunately. I say you try one each day until you have tried them all. LOL.

Tasty Vegan Bagel Ideas

1. Cinnamon + Coconut Sugar

This combination brings me back to my childhood. My mom used to make my brother and me a piece of cinnamon, sugar, and butter toast after school if we begged her enough. Here’s my vegan version.

1/2 bagel slice, toasted

1 tablespoon of vegan butter, softened

1/2 teaspoon coconut sugar

1/4 teaspoon ground cinnamon

I like to soften the vegan butter in the microwave on defrost or leave it on the counter for an hour before using it. Grab one half of a bagel slice straight out of the toaster so it is hot. Spread the vegan butter over the top. In a small bowl, mix together the cinnamon and sugar and then sprinkle it over the top. Enjoy it warm!

2. Almond Butter + Apple Slices

This combination of ingredients produces a protein-packed result, perfect for a mid-day snack!

1/2 bagel slice, toasted

2 tablespoons of creamy, all-natural almond butter

1/4 green apple, thinly sliced

1 tablespoon slivered almonds

1/2 teaspoon cinnamon

After toasting a bagel slice, spread almond butter over the entire top. Add fanned apple slices and then a dash of cinnamon over top. Finish it off with sliced almonds along the outer edges. Yum!

3. Peanut Butter + Banana

I remember growing up loving a good old banana and peanut butter sandwich. I mean, that is probably the next best thing after peanut butter and jelly, right?

1/2 bagel slice, toasted

2 tablespoons creamy, all-natural peanut butter

1/2 banana, sliced

1 tablespoon finely shredded, unsweetened coconut

1 tablespoon chopped, raw peanuts

1 tablespoon mini chocolate chips

1 tablespoon maple syrup

Start with a piece of toasted bagel. Next, generously spread the peanut butter over the top. Add the sliced banana, then the coconut, peanuts, and lastly the mini chocolate chips. Complete the vibe with a drizzle of maple syrup and you are all set!

Now, onto the three savory options

4. Bruschetta + Hummus

Okay, if I have to be honest, this one is my favorite. That’s because I absolutely adore bruschetta. I love this bagel topping idea because hummus brings in protein, tomatoes fiber, and all of the goodness the vegetables provide.

1/2 bagel slice, toasted

1/3 cup halved cherry tomatoes

1 small garlic clove, minced

1 tablespoon extra virgin olive oil

4-6 fresh basil leaves, chopped

Salt and pepper to taste

In a small bowl, add the chopped tomatoes, fresh garlic, fresh basil, olive oil, salt, and pepper. Mix that all together. Now, grab a half-toasted bagel slice and smear the hummus on top. Add a large scoop of the bruschetta over top. Complete it with a drizzle of balsamic glaze. Delish!

5. Hummus + Roasted Bell Pepper

This savory bagel might as well be considered a sandwich. It’s hearty and healthy, and the flavors are spot on.

1/2 toasted bagel slice

2 tablespoons roasted bell pepper hummus

1/2 cup sliced roasted bell pepper from a jar

1 tablespoon pumpkin seeds

Optional: 1/2 tablespoon fresh parsley, minced

Take a piece of a toasted bagel and spread the hummus over top. Next, add the sliced bell pepper, and pumpkin seeds, and then top it all off with optional fresh parsley. It’s so darn good!

Another one of my favorites, this Mexican-styled bagel is everything you need for a delicious meal!

2-3 tablespoons of premade guacamole

6-8 sweet and spicy pickled jalapeno slices, from a jar

1 tablespoon of fresh minced cilantro

Take a piece of a toasted bagel and add guacamole over the top. Next, press in about 8 jalapeno slices, but make sure to remove any seeds, unless you like it HOT. Last, sprinkle the bagel with fresh parsley.

How to Store These Bagels

The best way to store plain bagels is in a plastic bag, out on the counter at room temperature, and away from direct light. Believe it or not, storing them in the fridge will make them go stale faster.

Once the bagels are toasted and toppings are put on, it is not ideal to keep them after about an hour or two. I would not recommend saving bagels with toppings as they will get soggy on the top and hard all around. It’s best to eat them right away or within the hour.
